In januari 2005 ging een eerste collectief FOST-project van start: ‘Europese Cultuur en Identiteit. Convergentie en Divergentie in Eetgewoonten, 1800-2000’.
Bedoeling is onderzoek te doen naar sociale en culturele divergentie en convergentie in de Europese maatschappij van de 18de eeuw tot nu, aan de hand van veranderingen in de voedingsgewoonten, vanuit drie verschillende invalshoeken.

Three main topics, forming one whole, will be tackled:

1) aristocratic food habits, 1830 – 1860

2) bourgeois food culture: the restaurant, 1850 – 1914

3) ‘democratic’ food culture: the supermarkets, 1880 – 1960
